"I'll Have the 16-oz., 3-D Printed Steak, Please"

From meat grown from cells in a lab and 3-D printed into steak, to milk made from oats and burgers from pea protein, we're in an era of rapid food innovation.  Are these and other new foods really healthier for us and for the planet? How do they affect local economies?  And what other food creations are in the pipeline?

Experts in food technology and innovation will tackle those questions during "The Future of Food" event from noon to 1 p.m. on Dec. 7. The panelists are

■ Dr. David Lipman, biologist and former Chief Science Officer for Impossible Foods.  Before that, Dr. Lipman worked on the groundbreaking Human Genome Project and was founding director of NIH’s National Center for Biotechnology Information.  An elected member of the National Academy of Sciences, he was honored as a White House “Open Science” Champion of Change.

■ Dr. Bruno Xavier, food scientist and associate director of Cornell University’s Food Venture Center; and

■ Dan Wise, founder and CEO of RealEats, a farm-to-table enterprise that each week ships prepared, vacuum-sealed meals to tens of thousands of consumers in 31 states.
